Good Clean Quarantine – Orzo Cauliflower Salad

Back in the kitchen for Nat who is putting together a nice fresh Orzo Cauliflower Salad. It’s a pretty simple and straightforward recipe that is as good freshly mixed or cold the next day out of the fridge. Ingredients
For the Salad:

1 small head cauliflower broken into small florets (about 5 cups)
4 tablespoons olive oil
3 cloves garlic minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup orzo pasta
1/4 cup thinly sliced red onion
1 cup crumbled feta cheese
2/3 cup dried cherries
4 cups baby spinach
For the Dressing:
3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard

Kosher salt and black pepper to taste
