Strawberry Cobbler | Farm Foodie Fitness

strawberriesStrawberry season is quickly coming to end, unfortunately! So try out my recipe for raw strawberry cobbler while you can still get juicy, ripe ones from your local farmers market. This recipe is gluten-free, low on the glycemic levels, only using whole foods. It’s so easy to make and you can even make a larger batch and save in the fridge for up to 5 days, then just slice some more strawberries and you’ve got the perfect, guilt-free dessert all week!

 

Strawberry Cobbler

Ingredients:

• 1/2 cup walnuts

• 1/2 cup almonds

• 5-8 Medjool dates (soaked for 5-10 minutes)

• 1 tsp. cinnamon

• 1/4 tsp. Himalayan salt

• 6-8 large Organic strawberries

• 1 tsp. of raw maple syrup

Instructions:

Put soaked dates in the food processor once they become soft. You don’t want them to be very hard, but you don’t want to over soak them to the point of being mush either. 5-10 minutes should do the trick. Pulse your dates until they are a fine consistency, in very small chunks. Take your date mixture and place in a bowl. Now, add your walnuts & almonds and pulse again in the food processor until you have very finely ground. Pour your nut mixture over the dates and massage together, you’ll get a nice crumble!

Slice your strawberries and place them in a bowl, take your crumble and sprinkle generously over your strawberries. If you like, you can sprinkle on a bit of Himalayan salt and a tsp. of maple syrup to finish. (The maple syrup will make it a lot sweeter to see if you really want it to be sweeter before topping with the syrup)
